Vegetarian? What!

Yep, me an avid carnivore, complete skeptic of all things foodism.  Basically if you're a true vegetarian I'll probably think you have a mental disease.  But yes I made an entirely vegetarian meal tonight and it was, surprisingly enough, delicious.   Who knew.

Everything ready to go.  A combo of parmesan and cream cheese, corn meal, chicken broth an cream, mushrooms, a mixture of chicken broth, sherry and balsamic vinegar, parsley and thyme, a mixture of salt, nutmeg and white pepper, tomatoes and shallots.

The shallots got cooked off in a bit of olive oil and then the mushrooms were added.  I used oyster mushrooms, shiitake mushrooms, cremini and white mushrooms.

The finished dish.  After the mushrooms were cooked the broth and sherry mix went in along with the tomatoes.  That mixture simmered for about 15 minutes then the parsley, thyme and seasonings went in.

 The finished polenta.  The cream and broth mixture was brought to a simmer then the dried corn meal went in.  After about five minutes I mixed in the cream cheese and parmesan with some salt and pepper.
