Pork Chops and Peppers

In my excitement for Next I've been kind of slacking in blogging about my regular meals or even cooking them at times.  But tonight I did cook and I made pan-fried pork chops with sauteed onions and peppers.

Here we have flour, pork chops, onions, water and white wine vinegar, green and red peppers and anchovy and garlic. 

The pork chops got brined in sugar and salt overnight, and then seasoned with salt and pepper and then coated in flour.

The pork chops halfway through the searing process, that's just olive oil in the bottom of the pan.

After the pork chops were seared off the onions were added to the pan and cooked until soft.  Then the peppers and rosemary went in for a few more minutes and then the garlic was added and cooked for about 30 seconds.  The water and vinegar mix went in a reduced down for a bit.  Finally, the pork chops were added back in and went into a 350 degree oven for about 10 minutes.


Here is the final plating.  Overall a pretty good meal, except for the fact that the pork didn't need the salt under the flour crust, especially after sitting in the brine all night.
