Pasta Caprese

So I'm back, ya'll know the line about being an unintended break.  I'm really not so good at this blogging thing sometimes. 

Last night's dinner was something simple, pasta caprese.  Pasta, tomatoes, mozzarella and basil.  That's it.  So let's go into what it looked like.

The first step was the marinated tomatoes.  Olive oil, salt, pepper, tomatoes, shallots, garlic and lemon juice.  The garlic and shallots were minced and then combined with the lemon juice, olive oil and salt and pepper.  I finally diced the tomatoes and tossed them in the marinade.

The garnishes.  The whole dish was finished with a bit of sugar, then of course the basil and mozzarella.  I cut chiffonade of basil and diced the mozzarella.

The stuff for the pasta.  Ignore the oil, one should never put oil in pasta water, makes the sauce slip off the pasta. 

The final plate.  As a side I also decided to whip up some garlic bread.
