Osso Bucco

Yeah it's a little controversial but veal is delicious and the bone marrow delicousness is a nice side benefit.

Here we have the veal shanks, flour, a chicken broth and red wine mixture and a vegetable mixtures of onions, carrots, celery, garlic and tomatoes.

The veal halfway through the searing process.

After searing the rest of the ingredients went into the pan and were simmered for 90 minutes.

The final sauce ingredients.  We've got queso fresco which was used as a garnish, a combo of lemon zest sat and pepper, and then we have lemon juice, honey and chipotle.

The finished meat.  This is actually a new one for me, I cooked it so well that I couldn't even pull them out of the pan before they fell apart.

The finished sauce.

The final plating.  Overall an awesome, though time consuming meal to make.
